Goat Meat Skewers kebab recipe

Ingredients

¼ cup minced fresh chives

¼ cup stemmed, packed fresh cilantro leaves

¼ cup stemmed, packed fresh parsley leaves

3 tbsp red wine vinegar

½ tsp freshly ground black pepper

¼ tsp salt

2/3 cup olive oil

1 ½ Kg goat meat chunks cut in cube size

½ tsp ground cardamom

4 metal kebab skewers

Methods-

Ground the chives, cilantro, parsley, vinegar, pepper, and salt in a food processor and also pour the olive oil in it to make a light sauce.

Put half of this herb sauce in a large bowl and reserve the remaining sauce in a separate container in the fridge for garnishing. Add the meat cubes, paprika, and cardamom in the mixture and stir well, cover, and refrigerate for at overnight or at least 4 hours.

Take the meat out of the fridge and set them aside at room temperature then thread the meat cubes onto the skewers. Till you do that prepare the grill to cook the meat. Take a large heavy grill pan and heat it over medium-high heat until its smoking hot. When the grill is heating up, take the remaining sauce out of the fridge, so it comes back to room temperature. You can even nuke it for a few seconds to take the chill off but don't get it too hot or the taste will become bitter.

Set the skewers directly over the heat or in the grill pan. Grill for 6 minutes, on each side, until it is browned and cooked. Serve the goat meat skewers with the reserved sauce on the side.
